Cooking & Skills Classes Taught by Chef Curtis Webb

Chef Curtis Webb will be hosting a series of knife skills and cooking classes over the next few months.  The courses will be held at the Northwest Culinary Academy of Vancouver, and are a great gift idea for birthdays, outings with friends, anniversaries or Mother’s and Father’s Days.  They are also a great way to invest in your own future as a professional Home Cook!

Knife skills are one of the most important parts of the culinary arts, especially considering the amount of time a knife is held in your hand during meal preparation!  Familiarizing yourself with the basics and some other helpful tips will save you a world of time and effort in the kitchen – you’ll even get to practice making two gourmet recipes: the Wreck Beach Salad, and Vietnamese Rice Rolls.  Chef Curtis Webb will boost your confidence and your knife skills in one evening course, which includes a take-home whetstone to keep your knife blades sharp.

Perfect Fish for the Grill!  BC Pacific Halibut

Halibut is another common treat for Vancouver locals, and is one of my favorites to cook with because of its versatility with almost any cooking flavor.  This one night course takes advantage of this seasonal whitefish, and will teach you how to add some spice and flavor to its dense and flaky texture.  Wine will be served during the class, and you’ll learn all about Halibut and sample the recipes below:

–          Halibut Gravelax with Spring Herb Aioli

–          Seared Halibut Cheeks with Seasonal Vegetable Puree

–          Grilled Halibut Steak with Organic Vegetable Sauté
