Grilled Buffalo Skin, Vientiane, Laos, Pho Kow Restaurant

Grilled buffalo skin served with a spicy sauce, likely made from rice wine vinegar, fish sauce, garlic and chilis. Took a little getting used to but once they softened after some chewing, they were great as a beer snack! I discovered these at a great new hidden restaurant on the Mekong River, called PhoKow Restaurant, in Vientiane, Laos.
