Vancouver’s Top Chef Canada contestant Dale MacKay, Executive Chef of the recently closed Lumiere and DB Bistro, will be opening his own restaurant, ensemble, this May. A casual and modern French restaurant, ensemble will be located in the former Corner Suite building downtown at Smithe and Haro, just off Robson Street.
“ensemble is a new dining concept for Vancouver,” says MacKay. “we will combine classic French techniques with influences and flavour profiles from around the world, and offer a wide variety of flavours and textures in tasting size dishes priced from $8-$24. The kitchen will be doing what I’ve always done, but with a more casual and modern approach.”
MacKay will be bringing some of his staff with him to his open concept restaurant, including Sommelier/Maitre d’ Kevin van Hullebush, and Sous Chef Brad Hendrickson.
ensemble will have a 30-seat oyster and cocktail bar, along with an 85-seat dining room. The opening date is not yet finalized, but it will likely take place in early May.

This is going to be GREAT for vancouver and anyone visiting the city. With Dale Mackay’s skills and this atmosphere, it will be an awsome experience every time!!
This place is going to be packed from the get-go. Be sure to make your reservations early because not only do you have the Executive Chef from one of Vancouver’s best restaurants (and team) forming something new, but you have the TV show coming out at the same time. Will be a bit of a gong show to get in there the first 6 months…
